The winery's approach is absolutely natural from the vineyard, where all forms of systemic chemistry are repudiated, to the cellar. The wines are in fact produced by spontaneous fermentation from indigenous yeasts, are not filtered or clarified, and a homeopathic dose of sulphur dioxide is added before bottling.
