It is not only a Sauternes, it is Chateau d'Yquem the most famous "sweet" wine in the world. Vintage 1988 because for me "Il faut l'attendre"... And then, what's the hurry? Yquem wines have a very long life, certainly longer than the average human being, so why risk it? Like us, it grows, it transforms. In fact, it magically changes its colour, from straw to golden, turning towards amber and then to mahogany. It changes its perfume, depending on the vintage, widening or narrowing its bouquet. A glass for every vine and, only when the noble rot - the famous "botrytis cinerea" - has done its work attacking the Semillon and Sauvignon Blanc grapes, making the wine "moelleux", an untranslatable term and like the taste of an old Yquem, unique!
Colour and level in comparison, the fascination of the passage of time. These bottles are like gold - that's why they are usually called Chateau d'Yquem "liquid gold" - the more time passes and not only do they not lose their value, but they actually increase it... I wish it were the same for us, but let's console ourselves by uncorking one or three!
