Novy Saldorf, Moravia, Czech Republic Dobra Venice is a wonderful winery in Moravia, we can undoubtedly consider it among the pioneers of the world's natural wine movement, and it is truly a pleasure to have it in our catalogue. There are 16 hectares of vineyards scattered between the villages of Popice and Konice near Znojmo, along the Pod Lesem and Kraví hora wine roads. The vineyards are all located in the Podyjí National Park and have an unmistakable character given by the specific Palaeozoic subsoil (quartz, quartz sand, clay, granite, gneiss, flint). It is the only vineyard mountain dating back to the Palaeozoic era in the entire Moravian region. No chemistry between the rows, organic fertilisers are used at 100%, such as Nettle or Horsetail extracts, horse or cow manure. The varietal composition and soil and climate conditions of this area correspond best to the estate's ideas of good grapes for wine production. The main varieties cultivated are Müller Thurgau, Riesling, Veltlin Green, Sauvignon Blanc, Pinot Blanc and Pinot Noir. The vineyards are about 35 years old. We only planted Pinot Noir in 2017. and grow on the south-east slopes, from 280 to 320 m above sea level. The fertility of the vine bushes is strictly regulated below 60 q/ha (normally less than 40 h/ha). All work with the vine as well as the harvest is done by hand. The ripeness of the grapes is determined not only by the sugar content, but by the actual (oenological) ripeness of all the components of the grapes: i.e. sugar content, acid content, composition and ripeness of the tannins and components of the bouquet (stones, skins, etc.) Yeasts and milk enzymes come from their own vineyards.
