Domaine Valette
Chintré, Saone et Loire, Burgundy Philippe and Cecile are the third generation of winegrowers at Domaine Valette, which has been working organically since 1992. Soil care and respect for the vineyard are the company's cornerstones, through which they are able to obtain wines that truly reflect the terroir. In this context, there is a special focus on soil aeration by ploughing or tilling. Harvesting is carried out by hand in order to preserve the grapes, then the grapes are placed in baskets with a capacity of 15 kg each, so as not to burden the berries. In the cellar, fermentation takes place spontaneously using indigenous yeasts, and the crushed grapes are placed in large barrels, where they rest on the marc for about two years before being bottled, without the addition of sulphites or other chemicals. The estate's Pouilly Fuisse is able to challenge the great Chablis wines thanks to its great ageing capacity.
