CHATEAU DE HAUTEVILLE, CHARCHIGNE (France)
After working as a sommelier at Arpege, Eric Bordelet decided to work on his family's farm in Charchigne, in the south of Normandy, where apples and pears are produced from trees that are over a hundred years old.
Bordelet produces extraordinary biodynamic apple and pear ciders that are celebrated all over the world.
His is a real refermented fruit wine.
