Prehy, Chablis Fontaine Goby is the natural evolution of Domaine des Marronniers, in Chablis. This line of natural wine has been certified organic and biodynamic since the beginning of 2022, with vinification always in amphora, spontaneous fermentation from indigenous yeasts and long macerations, even one year. In the vineyard, one sulphur and copper treatment per year is carried out well below organic limits, while in the cellar the wines are bottled without clarification or filtration and with a homeopathic dose of sulphur dioxide. The bottles are only put on the market when they are deemed ready, which is why they can be delayed with respect to the regular course of the vintage.
