From 80-100 year old vines. Fermentation in cement for 15 days, then at least a year of maturation in large barrels and then cement and then at least another year in the bottle.

When tasted it is fresh, with strong tannins balanced by excellent body and incredible elegance. Long on the finish

The Ciolli family has been producing wine for 5 generations, they do it in Olevano Romano, a few km east of Rome, in a hilly area with volcanic soil.
Ciolli has the merit of having brought a talented but sometimes unexpressed grape variety, the Cesanese, to truly high quality levels, through a natural and minimally interventionist approach in the vineyard and in the cellar.
