This Chinon Cabernet Franc comes from old vineyards on clayey-limestone soils, the harvest is manual, in boxes. It ferments with maceration on the skins with only indigenous yeasts and aging in wood for 12 months. The grapes ferment spontaneously with native yeasts, but in different containers, based on the soil of their origin. Those that come from gravelly areas go into stainless steel, while those that come from clayey ones end up in old oak vats.
