Fruit of Fer Servadou’s oldest vines on limestone soils. Whole bunch vinification with approximately 20 days of maceration. Refines for 12 months in exhausted barriques.
Pink and Violet, then red fruits, spices and a very fine smoky note.
It is exciting to taste, the savory note accompanies the long finish.

Nicolas Carmarans grew up in a family of restaurateurs and has always been passionate about natural wine, so much so that he opened Il Cafè de la Nuovelle Mairie, one of the first natural wine wine bars in Paris and France.
After many years spent behind the counter offering natural wine, he decided it was time to produce his own and so he purchased land in Montezic, in the Aveyron region, beautiful and nestled between mountains, fortified villages and medieval castles.
Geographically it is located within the triangle between Toulouse, Montpellier and Clermont Ferrand, in the South West, near the central massif.
It produces Aligotè, Chenin Blanc and two really little-known vines such as Fer Servadou and Negret de Banhars.
