The grapes are harvested ripe and come from half-century-old vineyards on Kimmeridgian soils rich in marl, clay and limestone, the fermentation is spontaneous with native yeasts, the maceration on the skins is long and the refinement in barriques used for 3 years

Splendid company in the heart of the Sancerre AOC which extends over 3 hectares of silica-rich vineyards that Sebastien Riffault inherited from his father and which he runs together with his wife.
The company has been certified organic since 2007, but the approach in the vineyard is actually absolutely natural and the grapes are always harvested at full phenolic ripeness.
In the cellar the alcoholic and malolactic fermentations are spontaneous, the wine is neither clarified nor filtered
