Krimiso IGP Terre Siciliane is an orange wine produced by Aldo Viola, in Alcamo, Sicily. The Catarratto grapes are harvested and destemmed manually, ferment spontaneously in steel with indigenous yeasts and macerate for 5 months on the skins, refinement takes place in steel for another 5 months. It is bottled without filtration or clarification. Total sulfur <20mg/l. Krimiso PGI Terre Siciliane is a wine that exudes Mediterranean scrub from every pore, in fact on the nose it is a riot of ripe exotic fruit, dates with citrus notes and notes of sage and rosemary, prickly pear and orange blossom. In the mouth it is fresh and lively, slightly tannic and salty, long on the finish. Try it with cod fillet.

Aldo Viola is a natural wine producer from Alcamo, in the province of Trapani, in the western part of Sicily. Here he manages 16 hectares of vineyards without the use of systemic chemistry, planted mostly with native Sicilian grapes.
Nero d’Avola, Grillo, Catarratto, Nerello Macalese, Perricone and even Syrah, a grape that was adopted from this land. Aldo is young and charismatic, with many experiences behind him around the world, most recently in Denmark.
Aldo Viola’s wines represent an incredible terroir, among the most suitable on the entire island, and are produced in a traditional and sustainable way, respectful not only of nature but also of those who drink those labels, and of the memory of time. We are talking about unique and overwhelming wines, warm like a hug, fresh like sea water. Aldo thinks of wine as a real food, he doesn’t see it simply as a drink, they are produced with heart and generosity.
The harvest is obviously manual, in the cellar we proceed with spontaneous fermentations using indigenous yeasts, the malolactic fermentation takes place naturally. Sulphites are used in homeopathic doses, no filtration or clarification is required. Production is less than 40,000 bottles per year.
