🛁 The grapes come from a hilly terrain rich in clay, crushing is not carried out and so the whole de-stemmed grapes are placed in the press. Fermentation is spontaneous with indigenous yeasts in closed stainless steel tanks without temperature control. After racking, it matures 8 months in stainless steel. Later in the spring, the must frozen during the harvest is left at room temperature for a few days until it starts to ferment, at which point it is added to the wine and immediately bottled without filtration or clarification and with a homeopathic dose of added sulphites.
