The grapes come from hilly soil rich in clay, pressing is not carried out and so the whole destemmed grapes are placed in the press. The fermentation is spontaneous with native yeasts in closed stainless steel tanks without temperature control and with 50% whole bunch, the remaining 50% is pressed with the feet. The maceration lasts 5 days with two total punchings, then drawing off and aging for 6 months in steel and 12 in 54 liter demijohns, finally it is bottled without filtration or clarification and with a homeopathic dose of added sulphites

Alma Raminga Vini Erranti is a boutique rather than a cellar, the production is minimal and very accurate.
The company approach is absolutely natural from the vineyard, where any form of systemic chemistry is repudiated, to the cellar.
The wines are in fact produced through spontaneous fermentation by native yeasts, they are not filtered or clarified, a homeopathic dose of sulfur dioxide is added before bottling.
