🛁 The grapes come from a hilly soil rich in clay, crushing is not carried out and so the whole destemmed grapes are put through the press. Fermentation is spontaneous with indigenous yeasts in closed stainless steel tanks without temperature control and with the 50% whole cluster, the remaining 50% is pressed with the feet. Maceration lasts 5 days with two full punching-downs, then racking and ageing for 6 months in stainless steel and 12 months in 54-litre demijohns, finally bottled without filtration or clarification and with a homeopathic dose of added sulphites

👃🏻 Hints of red fruit, even under spirits, with spicy and balsamic nuances

👅 Warm and with polite tannin, fresh and clean, mineral and persistent
