The grapes come from hilly soil rich in clay, pressing is not carried out and so the whole destemmed grapes are placed half in the press and the other half in the tank. Fermentation is spontaneous with native yeasts in closed stainless steel tanks with 20% whole grapes without temperature control. Maceration for 10 days without punching down, after racking it refines for 8 months in steel, then bottled without filtration or clarification and with a homeopathic dose of added sulphites
On the nose delicate hints of fresh flowers with nuances of candied orange, tea leaf and aromatic herbs typical of the Mediterranean scrub, mineral memories, then saffron and marzipan
When tasted it is fresh and enveloping, full and mineral, savory and long
Serving temperature 10°-12°

Alma Raminga Vini Erranti is a boutique rather than a cellar, the production is minimal and very accurate.
The company approach is absolutely natural from the vineyard, where any form of systemic chemistry is repudiated, to the cellar.
The wines are in fact produced through spontaneous fermentation by native yeasts, they are not filtered or clarified, a homeopathic dose of sulfur dioxide is added before bottling.
