🛁 The grapes come from a hilly soil rich in clay, crushing is not carried out and so half of the whole destemmed grapes are put in the press and the other half in the tank. Fermentation is spontaneous with indigenous yeasts in closed stainless steel tanks with 50% whole berries without temperature control. Maceration for 30 days without punching down, after racking it matures 4 months in a 54-litre demijohn, then in the bottle without filtering or clarification and without added sulphites

👃🏻 The nose expresses delicate aromas of herbs such as thyme, basil and rosemary and fruit such as apple and peach. It is mineral with hints of white flowers

👅 In the mouth, it is fresh and mineral, savoury and slightly tannic with a good aromatic persistence accompanied by a nutty undertone

👍🏻 Serving temperature 10°-12°.

💕 Aged Pecorino

😍 Decco in Umbrian means here, signifying the origin of the grapes. The wine is a dedication to Dante Alighieri and the Divine Comedy, published in Foligno in 1472
