Ciliegiolo 2021 is a red wine produced by Andrea Pilar in Molino Vitelli, in Umbria, and obtained from 100% Ciliegiolo grapes harvested manually. Spontaneous fermentation with indigenous yeasts for 2 or 3 weeks with short maceration on the skins, refinement for a few months in steel with frequent batonnage. It is finally bottled with a homeopathic dose of sulfur dioxide. Ciliegiolo 2021 is floral and fruity on the nose with herbaceous and balsamic notes, in the mouth it is fresh and savory, the tannin is clear but docile, and the finish is of nice length. Try it with Umbrian livers!

The grapes are destemmed and softly pressed, they ferment spontaneously in steel for 2 or 3 weeks, the maceration is very short. The Malolactic process is also carried out, the new wine is aerated and the fine lees are mixed. The refinement is in steel and lasts a few months with periodic batonnage. A small quantity of sulfur dioxide is added before bottling.

The Andrea Pilar project was born in an uncontaminated area of Umbria, not far from Umbertide, the landscape is decidedly hilly, the climate is mild in Spring and cold in Winter, its clay is calcareous, alluvial and rich in skeleton.
Perfect conditions for the grapes to ripen without stress, enhancing aromas and acidity even in the most complex vintages.
Andrea and Pilar Gritti are brother and sister and after years of training abroad they decided to return to Italy and take the reins of the family business, initially designed for conventional production, but which has now clearly turned the page, in search of a natural and respectful approach towards the environment and the end customer.
