Arbois Savagnin Oh Yeah is a white wine produced by Hughes Beguet in Mesnay, Jura, and obtained from 100% Savagnin grapes grown on blue and gray marl at 300 meters above sea level. The harvest is manual, spontaneous fermentation with indigenous yeasts with only a small part of the mass macerating for a few days. A part of the wine is vinified in steel for a few weeks and is subsequently reassembled with most of the maturing liquid inside exhausted barrels. From this moment, another 7 months of refinement before bottling, without filtration, clarification or addition of sulfur dioxide. Arbois Savagnin Oh Yeah is produced with the ouillè method and therefore has no oxidative traits while maintaining a pure Jura style, fresh and agile, very persistent. In the mouth, yellow floral notes and ripe exotic fruit, spicy and slightly smoked. Didactic but perfect combination, Comtè cheese
