Berceau des Fées 2022 Domaine Aux Moins

Barceau de Fèes is a white wine obtained from Chenin Blanc grapes produced by Domaine Aux Moins in Sevennières, in the Loire. **Le Berceau des Fées** wine is born from young vines of around 10 years old, at 372 meters above sea level. Cultivated with the double guyot system, suitable for young plants, it is produced exclusively in steel to preserve its freshness and lightness. The yield is very low, only 20 hl/ha, with manual harvesting and controlled fermentation in steel for two months. Malolactic fermentation is not carried out and the wine ages for six months without being filtered or clarified. The result of Barceau de Fèes is a floral and citrus wine, herbaceous on the nose, with a fresh and lively mouth, with great pleasure.

  The grapes come from young plants of about 10 years old at almost 400 meters above sea level, with very low yields and manual harvesting. Delicate pressing with fermentation by native yeasts, it is vinified entirely in steel, does not undergo malolactic fermentation and is aged for approximately 6 months. Finally it is bottled without filtration or clarification.

**Domaine aux Moines** is a historic winery in the Loire Valley, with roots dating back to 1130, when Cistercian monks planted the first vineyards. After a brief period in the 1920s under the ownership of the Benz family, today the company is managed by **Tessa Laroche**, who inherited the leadership from her mother Monique, founder of the domaine in 1981. The estate extends for 12 hectares with 50-year-old vines, close to Nicolas Joly’s famous **Coulée de Serrant**. Since 2011, the **Savennières Roche aux Moines** area has obtained its own appellation for the distinctive character of the Chenin Blanc grown on shale soils. Since 2006, production has been organic, with low yields and high potential. The nearby Loire River protects the vines from spring frosts and helps the grapes ripen.
