Produced from a sapling vineyard with vines that are up to 80 years old, planted on soils rich in clay and calcareous tuff. Maceration on the skins for 20 to 40 days depending on the vintage, maturation for approximately 24 months in 30 hl truncated conical oak vats and at least six months in the bottle.

Faro is a micro-denomination with just 25 hectares and only 5 producers.
Giovanni Scarfone di Bonavita is one of them, a young micro-viticulturist born in 1980, first harvest in 2006, and in this area he owns 7 hectares of which only 2.30 are under vines, the rest are destined for olive groves and woods.
The strange thing is that in this area threatened by concrete, everything tells you about Sicily.
