CHATEAU DE HAUTEVILLE, CHARCHIGNE (France) After working as a sommelier at Arpege, Eric Bordelet decided to work in the family business in Charchigne, in the south of Normandy, where apples and pears are produced from over 100-year-old trees. Bordelet produces ciders from biodynamically grown apples and pears that are extraordinary and celebrated all over the world. His is a true refermented fruit wine.
