It ages for at least nine months in wooden barrels, then it is bottled without first being filtered.
Pomegranate juice and red fruits including cherries and wild strawberries, strong hints of dark petaled flowers, slightly spicy and mineral
The sip is delicate, the body is subtle, the tannin is barely perceptible. Savory and long on the finish
Serving temperature 14°-16°
Baked redfish with peppers
We find it to be a truly typical expression of Burgundy red wine
Vézelay, Burgundy
We are located south of Chablis, an area that was devastated by Philoxera, and unlike other areas the vine was replanted here only in 1970, the AOC Vezelay will arrive only in 1997
Domaine de la Cadette is located in Vezelay, a small medieval village, almost halfway between Paris and Dijon. The territory is characterized by soils rich in chalk and limestone which make the wines subtle and mineral.
It is an organic company with vines that are around 30 years old.
