The grapes come from an area characterized by white stones of Kimmeridgian origin and limestone subsoil, they ferment spontaneously for 6 days in steel vats with immediate pressing and without temperature control. It then refines for 6 months in steel tanks, it is not filtered.

Valentina Passalacqua has an absolutely organic approach to viticulture, having developed a great knowledge of the terroir in which her company is located.
Valentina, after several years of production, felt the need to isolate within her vineyards some plots characterized by exclusively calcareous soil of the Kimmeridgian type, hence the now famous Calcarius Project was born: wines mineral, genuine and uncompromising.
The company breeds native varieties which are the result of a historical-cultural contamination that has its roots in Magna Graecia: Nero di Troia, Bombino, Greco, Falanghina, Negramaro and Aleatico first and foremost.
The carefully non-interventionist approach to the cellar does the rest. What is indicated on all labels is the atomic number (20) and the atomic weight (40.08) of the chemical element calcium (Ca)
