Turbid ( Nebbiolo 100%) 2009
-Crushing and fermentation in stainless steel with maceration on the skins for about 25/30 days. Malolactic fermentation in Austrian oak barrels where it is aged for thirty months. It then spends two months in steel before bottling. Wide, very wide nose. In the opening spices and dried flowers give way to notes of smoke that then turn to violet and chocolate. Mouth like a Barolo, rich and juicy, with integrated tannins and very long finish.
Secret (Barbera 100%) 2015
-Crushing and fermentation in stainless steel with maceration on the skins for about 25/30 days. Malolactic fermentation in Austrian oak barrels where it is aged for eighteen months. It then spends two months in steel before bottling. It is the archetype of Barbera: fascinating, severe, deep, complex, emotional.
Until ( Sauvignon 100%) 2 bottles
-Sinchè is a Sauvignon Blanc made from mass selections of varieties that arrived from the Loire and Friuli. Produced in Novello until 2016, from 2017 the grapes are harvested in the cru San Sebastiano in Monforte d'Alba. Essential, bare vinification: soft pressing of the whole grapes. Selection of the juice from the first pressing, with a yield of about 50%, and maturation in 3rd and 4th passage barriques for eighteen months with batonnage. A unique Sauvignon, aromatic, complex, changeable and with character. The wood is not perceived but is of great help for the longevity of the wine.
Red (Dolcetto 85, Barbera 10%, Nebbiolo 5%) , 2 bottles
-Dolcetto and Barbera are pressed at the same time, while the Nebbiolo is blended at the end of malolactic fermentation. Maceration of 25/30 days on the skins in steel. Aged in Austrian oak barrels for four months and another six in bottle. An eclectic wine. Good when young, very good with age. Combines depth and drinkability.

Cascina Ebreo is the dream of making wines in Piedmont the way Pete wants them: unruly, sincere, spontaneous, anarchic, crazy. As all great wines should be.
The story begins in 1993 when two Swiss people, Peter Weimer - all of them Pete - and Romy GygaxThey decided to leave their jobs (she worked in marketing, he in software business) to move to the Langhe and devote themselves to their great passion, wine. First drinkers and buyers as well as friends of the great producers of the Langhe, then pioneers of a certain type of agriculture and winemaking, in 1997 they present their first Barolo to the tasting commission but it is judged revisable because it is cloudy (they have never filtered their wines).
Romy and Pete don't flinch and go right on their way. That's the wine they want to make.
They downgrade it and the "turbid!" is born.This is the first and only case of rebellion against tasting commissions that are at the very least questionable in a denomination as weighty as Barolo. Faithful to Pete's teachings and always under his careful supervision, today it is the young talent Gian Luca Colombo who oversees the production of Cascina Ebreo's new course.
