🛁 The two grapes are harvested at different times, when fully ripe. First the Muller Thurgau grapes and when fermentation of these starts, the Riesling grapes. Together they finish fermentation and mature in cement vats for at least 5 months, then they are bottled

Castello di Stefanago is a magnificent estate over 1,000 years old at the centre of a stunning ecosystem.
We are located in Borgo Priolo, on the rolling hills of the Oltrepo Pavese, where in all there are 135 hectares owned by the company, divided between meadows and woods, orchards and sown fields. Vineyards make up a little more than 10% of the total with their 20 hectares, divided into small plots to enhance local biodiversity.
The approach of the company is natural and organic, where manual work is the constant in order to always harvest ripe and healthy grapes.
Riding Castello di Stefano are the three Baruffaldi siblings, Antonio, Giacomo and Antonietta, the latest generation of a family of producers who love the land they come from.
The winery produces wine for all tastes, with a common denominator: elegance and ageing capacity
