Son llebre Blanc is a white wine produced by Ve d’Avior by Cati Ribot in Santa Margalida, in the North East of Mallorca. Cati is one of the most famous producers of natural wine in all of Spain, third generation of the Galmes i Ribot family. Son Llebre Blanc is obtained from a blend of local grapes, Giró Ros, Malvasía and Prensal Blanc; the last two macerate for a few days on the skins to give depth to the wine while the Girò Ros, which is a red berry, is pressed immediately to give punch and freshness. Aging in amphora for 4 months, then in the bottle with a homeopathic dose of sulfur dioxide added. It is a macerated white that perfectly interprets the citrusy, herbaceous and salty Mallorcan wine, with lots of freshness. Manual harvest, the Malvasia and Prensal Blanc grapes macerate for a few days on the skins, while the Girò Ros is pressed immediately; once reassembled the grapes refine for about 4 months in amphora before being bottled with a homeopathic dose of sulfur dioxide

Cati Ribot is known throughout Spain as the most famous producer of natural refermented products in the bottle. She grew up in Mallorca, the third generation of winemakers of the Galmes i Ribot family of Santa Margalida, in the north-east of the island, working side by side with her father Jaume since 2004.
The enlightenment came in 2008 when, working as a sommelier in Barcelona, he fell in love with wines that were very different from those that are the Spanish production stereotypes.
The family business has been certified organic since 2012 but has veered decisively towards biodynamic thanks to the meeting with Joan Rubio, a legend in Penedes, and Cati’s stubbornness.
In 2019 Cati Ribot realized her dream and inaugurated Ve d’Avior, a personal project aimed at rediscovering the wine flavors of Mallorca, through the native island vines and minimal intervention in the vineyard. Ve d’Avior in fact means Wine of the Past, and all the labeled wines share a low alcohol content and a low dosage of sulfur dioxide added pre-bottling.
In Mallorca the summers are very long, hot and sunny and therefore the native grapes ripen late, and demonstrate great resistance to drought, with their typically large grapes.
Escursac is Cati’s favorite grape, the only one vinified in purity, and grown on 6 hectares, 5 of which were added in 2020.
