Macera tra le 3 e le 4 settimane a contatto con le bucce, poi viene svinato ed affinato in acciaio e fusti di Rovere. Naso di fiori a petalo scuro, poi frutti di bosco e frutta polposa: Amarena, Susina e Prugna, minerale e delicatamente speziato. Fresco e snello, la sua struttura è media ed il tannino gentile, il finale rotondo
Entre-deux-Mers 2018, Sémillon 60%, Sauvignon Blanc 40%
Fermentazione ed affinamento avvengono in acciaio dove il vino rimane per 6 mesi sui lieviti. Poi bottiglia per almeno 3 mesi. Al naso sentori di fiori bianchi e frtta fresca a polpa bianco, minerale ed erbaceo. L’assaggio è una fusione di caratteristiche peculiari dei due vitigni laddove il Sauvignon spinge sulla beva ed il Semillon sul corpo. Ne esce un sorso agile ed appagante, persistente

The Deville family is famous for being a historic Maison in Verzy, the elective home of Pinot Noir in Champagne, precisely 20km from Reims.
Jean Paul, the current generation owner, who is waiting for his daughter Marie Alice to take the reins one day, is an eclectic character and when he decided to double down he did it in style.
It does so in Bordeaux, an iconic wine area, a strip of land with unique characteristics that allows the best expression of the great international grape varieties.
Chateau Deville is Jean Paul's creation, something he wanted very much and which can count on no less than 36 hectares of vineyards, near the village of Rions.
The approach is markedly respectful of nature and the biodiversity of the vineyard ecosystems, with the aim of bringing to the winemaking process frank and sincere grapes that have been treated as little as possible and are a pure expression of this incredible terroir.
