TheChianti Classicois an extraordinary red wine obtained from Sangiovese grapes coming from the company’s vineyards within the company. The approach is biodynamic/organic and in the cellar the grapes are carefully selected, they ferment spontaneously with indigenous yeasts in steel tanks where they macerate for 3 weeks. Aged for 18 months in non-first passage barriques, it is bottled with a homeopathic dose of sulfur dioxide, and rests in glass for a few months. Chianti Classico is a very pleasant wine and surprising for its longevity, the taste is still surprisingly fresh, nice flavor and length. The complex nose opens with evolved nuances of berries and red flowers, then balsamic and peppery notes. Always safe with grilled meat

The Fontodi winery, belonging to the Manetti family since 1968, is an organic company located in Panzano, in Chianti. With over 100 of its 220 hectares planted with vineyards, Fontodi specializes in the valorisation of Sangiovese, cultivated according to the principles of sustainability and naturalness, without the use of chemical products. The company uses compost derived from pruning residues and manure from internal Chianina breeding to fertilize the vineyards, aiming for high-quality wine production that is representative of the territory. Winemaking takes place in the modern cellar, designed to work by gravity, preserving the integrity of the grapes.
