Gavi di Tassarolo La Fornace is a white wine produced by Cinzia Bergaglio in Tessarolo, in the province of Alessandria, and obtained from Cortese grapes harvested manually and coming from calcareous clay soil, rich in iron. Spontaneous fermentation by indigenous yeasts in steel tanks, aging for a few months in vitrified concrete, then another few months in the bottle. We like Gavi di Tessarolo La Fornace because it is a simple and delicate wine, savory and easy to drink, capable of keeping up with apparently unbalanced combinations, with a beautiful floral and fruity nose, fragrant and mineral.
