Maceration for a few days with fermentation in steel and refinement in the same container of 50% of the mass for approximately 12 months, the other half refines in non-first passage barriques

Châteauneuf-du-Pape – Côte du Rhone
The Clos des Papes has belonged to the Avril family since 1600, but since 1911, when Paul Avril contributed significantly
crucial to the creation of the Châteauneuf du Pape appellation, which the company further consolidated and
reached its current size of 40 hectares divided into 24 parcels divided around the city and one of these is a
‘clos’ next to the Castle of the Popes and hence the name Clos des Papes. The company has been certified organic since 2011. The secret of the high quality of the company’s wines is the low yields. The wines are unfiltered. Today it is the great-grandson Paul-
Vincent Avril to host “Domaine”.
The red Châteauneuf du Pape is 90% of the company’s production and aged in barrels for 12/15 months, while the white ferments and ages in steel.
The history of Châteauneuf du Pape wine is linked to the presence of the Popes starting from 1309; during theirs
During their stay in Avignon, the Popes had a castle built as a summer residence, 25 km north of the city
where, thanks to the favorable conditions, they began to grow grapes.
Today the vineyards cover an area of 3300 hectares; the soil is thin and composed of layers of Miocene “Galet” pebbles which retain the heat during the day and return it at night.
Another peculiarity of Châteauneuf du Pape are the numerous vines used (up to thirteen).
For the red: Grenache, Mourvedre, Syrah, Cinsault, Counoise, Terret Noir, Vaccarèse, Muscardin. For white:
White Grenache, Roussanne, Clarette, Bourboulenc, Picpoul, Picardan.
The percentages of vines used can be at the discretion of each company, resulting in a variety of different styles and characteristics between the various producers.
Their reds, often harsh in their youth, age very well developing magnificent intensities
aromatic, while the rare whites, already rich in youth, develop exotic aromas that sometimes recall the
orange peel.
