🛁 The grapes are harvested by hand, destemmed and pressed in a press after a maceration period of several days, fermented spontaneously with indigenous yeasts in open vats and matured between steel and fibreglass for about 6 months, bottled without filtration, clarification or addition of sulphur dioxide
👃🏻 Currant, cherry and plum with hints of blood orange and hints of rose and violet, then liquorice and gentian, sage and rosemary
👅 Fresh but very soft, the tannin is velvety, the sip snappy and the finish lingering
👍🏻 Serving temperature 16°-18°.

ColleFormica was born in 2017 in an area with a millenary tradition.. Actually here the Bombetti Family has been producing wine (and more) for more than a century, it is not unusual, walking through the rows of vines, to come across vines almost half a century old. The vegetation also includes centuries-old oaks and orange trees, testifying to the absolutely Mediterranean climate of the entire area.
The company takes its name from the district where the vineyards are located in a hilly area a few kilometers from the sea and the city of Rome. The territory, that of the Roman CastlesIt is volcanic and this, translated into wine-making, gives the wines an elegance that is truly worthy of attention.
The winery is very young but is enjoying great success among natural wine lovers thanks to its easy-drinking and bewitching aromas.
The owner of the winery is Sergio Bombetti, who learned to make wine as a boy thanks to his father's teachings and is ready to hand over the helm to his son Paolo, who has a degree in economics but is now an accomplished winemaker.
ColleFormica represents an extraordinary union between indigenous grape varieties (yes, even the Primitivo can be defined as such) and natural winemaking approach (sulphur dioxide below 20 mg/litre) and environmentally friendly.
