From vines over 80 years old, bush-trained at 250 meters above sea level with a density of 8,000 plants per hectare. Aged in 30-hectoliter Slavonian oak barrels for 2 years. Pulpy and juicy. Deep and inviting.
South Africa 2018, Merlot, Cabernet Sauvignon
Fermented in cement. Matures in Slavonian barrels. Reminiscent of the scents of a Sicilian summer evening: spices, herbs and capers.

These are Titta Cilia, Giusto Occhipinti, Cirino Strano and they gave birth to COS in 1980.
The three have erided (rented) the old family winery of Giuseppe Cilia, Titta's father and vineyard .
In these 30 years of experience they have revolutionized Cerasuolo di Vittoria.
They profess the Biodynamic "faith" and minimal intervention in the vineyard.
Very interesting also their with the Spanish Amphorae purchased now, 20 years ago.
