Cos Zibibbo in Pithos 2022

Zibibbo in Pithos is a dry white wine produced by Azienda Agricola Cos in Vittoria, Sicily, and obtained from 100% Zibibbo (Moscato d’Alessandria). The grapes come from red and calcareous soils, are harvested manually and left to ferment spontaneously with indigenous yeasts and a very long maceration (7 months) in 400 liter terracotta amphorae. They are then moved for at least another 3 months to refine in concrete. Zibibbo in Pithos has a magical nose made of floral notes and nuances of tropical fruit and aromatic herbs. In the mouth it is dry, fresh and dynamic, saline and persistent, to try with a first course based on pistachio pesto

Did you know that COS is the acronym of the initials of the names of the three founders of the company?

They are Titta Cilia, Giusto Occhipinti, Cirino Strano and they gave birth to COS in 1980.

The three inherited (for rent) the old family cellar of Giuseppe Cilia, father of Titta and vineyard.

In these 30 years of experience they have revolutionized Cerasuolo di Vittoria.

They profess the Biodionic “faith” and minimal intervention in the vineyard.

Theirs is also very interesting with the Spanish amphorae purchased now, 20 years ago
