The wine ferments and ages in concrete tanks. It is bottled with the addition of fresh must without selected yeasts. It refines on the yeasts for nine months.

The company was founded in 1935, and is now managed by Ermanno Croci and his son Massimiliano.
Massimiliano strongly wanted to direct production towards a high quality, natural product that represented the tradition of Piacenza wines.
Croci’s objective is to produce wines that are genuine and identifiable, which enhance the territory and therefore respect it. The cellar is now a point of reference in terms of experimentation and research, aimed at discovering new methods of winemaking and refining local grapes.
