Pinot Noir Granite è un vino rosso prodotto da Domaine Achillèe a Scherwillerm, in Alsazia, ed ottenuto da uve Pinot Noir in purezza, vendemmiate manualmente. Macerazioni di 96 ore con fermentazione spontanea da lieviti indigeni, affinamento di due anni tra legno non di primo passaggio ed acciaio. Viene imbottigliato senza aggiunte di anidride solforosa, non prevede filtrazioni nè chiarifiche. Pinot Noir Granite è complesso all’olfatto con sentori di floreali appassiti e di more e mirtilli, ma anche di prugna, in confettura, poi arrivano ondate minerali e di spezie scure, infine la torrefazione. In bocca è pieno ed avvolgente, potente e rotondo, dal finale lungo e pregevole. A noi viene di abbinarlo con pecorini toscani

Yves Dietrich and his sons Pierre and Jean have created a true microcosm, unique and contagious.
Yves is in charge of the vineyard, Jean is in charge of the cellar and Pierre is in charge of the commercial side.
In 1991 Yves decided to take over the family farm, which he converted to organic in 1999 before making the big leap into the biodynamic world in 2003.
In 2017, a bioclimatic wine cellar was created in the largest thatched building in Europe, shared with Domaine Jean Paul Schmitt.
The estate has 18 hectares and the wines are precise and direct, engaging and clear.
