Cassaigne, France

The Domaine d'Aurensan was founded at the end of the 19th century and consists of 7 hectares on clay-limestone soil in Tenareze, Caissagne.

The entire production process is carried out by hand, from pruning to trellising, from harvesting to vinification, following the principle of minimal human intervention.

The aim is to have grapes destined to produce labels of quality and longevity.

The grapes are harvested when they are deemed ripe for distillation. That is, when they have a high acidity and a low sugar content, vinification takes place with the sole use of indigenous yeasts and without the addition of sulphites.

The humidity in the cellar is perfect for long and deep ageing, here the classic pieces of 420 litres (Armagnac casks). These are obtained from oak wood and made in-house.

This ageing process is considered necessary for Domaine d'Aurensan Armagnacs to acquire their inimitable aromaticity.

The bottles are all numbered, all TRIPLE ZERO: zero dilution, zero sugar, zero colouring
