Vezelay Les Saulniers is a white wine from Domaine de la Cadette produced in Vezelay, Burgundy. It is made from pure Chardonnay grapes that ferment spontaneously by indigenous yeasts in steel, after a short maceration, and age in the same container for about 10 months. We like Vezelay Les Saulniers because the story of the provenance of its grapes is really special, they come from a small vineyard next to a street called Fontaines Salées, which was historically used for smuggling salt. It is a fresh and elegant wine, savoury and persistent, and fresh hints of citrus and white peach are easily discernible on the nose. Excellent in combination with vegetable dishes.
