Domaine de la Cadette Vezelay Les Saulniers 2022

Vezelay Les Saulniers is a white wine from Domaine de la Cadette produced in Vezelay, Burgundy. It is obtained from pure Chardonnay grapes which ferment spontaneously by indigenous yeasts in steel, after a short maceration, and refine in the same container for approximately 10 months. We like Vezelay Les Saulniers because the story of the origin of its grapes is truly particular, in fact I come from a small vineyard adjacent to a street called Fontaines Salées, which was historically used for smuggling of salt. It is a fresh and elegant wine, savory and persistent, on the nose you can easily detect fresh hints of citrus and white peach. Excellent in combination with vegetable-based dishes.

  From a small vineyard located along the road that was historically used for smuggling salt from the nearby “Fontaines Salées”.  It carries out both fermentations, alcoholic and malolactic, in steel tanks, where it remains for ten months.

We are located south of Chablis, an area that was devastated by Philoxera, and unlike other areas the vine was replanted here only in 1970, the AOC Vezelay will arrive only in 1997

Domaine de la Cadette is located in Vezelay, a small medieval village, almost halfway between Paris and Dijon. The territory is characterized by soils rich in chalk and limestone which make the wines subtle and mineral.

It is an organic company with vines that are about 30 years old, the soils are rich in chalk and limestone which give subtle and mineral wines.
