Saint Aubin Le Ban is a red wine from Dominique Derain in Saint Aubin in Burgundy, obtained from pure Pinot Noir grapes from 1920 plants located on gravelly soil and grown naturally. The harvest is manual, the spontaneous fermentation by indigenous yeasts and the maceration of about a month with 10% of the entire mass is left as a whole bunch. Aging in non-first passage wood for approximately 18 months. Saint Aubin Le Ban is a wine with spicy and balsamic hints of berries and dark petaled flowers. It is fresh and elegant in the mouth, savory and persistent, to be combined with Burgundy Beef.

The grapes come from 1920 vines on gravelly soil, 10% of the mass is not destemmed, they ferment in wooden vats, and are always aged in wood for up to a year and a half

Saint Aubin (France) Dominique Derain is a big shot from the Hautes Cotes de Beaune. In 1988 he arrived as a cooper, he is now retired, and is considered a true guru of Burgundy. His consultancy is in demand and expensive.
At the end of the 80s he purchased the estate near Saint-Aubin, his idea of viticulture has always been biodynamic. Today it has passed its ownership to Julien Altaber and Carole Schwab, while continuing to participate in operations in the vineyard and cellar.
Dominique’s wines are oxymorons in the bottle, combining elegance and that sense of rusticity so dear to the wines of this area.
They are thin, slender, ethereal and delicate, often difficult to grasp in all their grandeur by those “taking their first steps” with Pinot Noir.
However, great wines can be recognized by one thing: the bottle that has just been uncorked is already magically finished and you immediately start to feel nostalgic for it.
Derain is one of the pioneers of quality European-style winemaking in Chile where he inaugurated the company of the same name, in Casablanca Valley, but that’s another story
