Chenin on soil with 30 centimeters of clayey sand and then limestone. Tillage with horses and natural grassing. Alcoholic fermentation in 400 and 600 liter barrels. 4-hour pneumatic pressing, 2 months of fermentation and maturation on noble lees for 9 months. Saumur Clos de l`Echelier Blanc 2015, Chenin Blanc

From an emblematic 300-year-old clos with breathtaking views of the Loire and 6,500 vines per hectare. Manual harvest, alcoholic fermentation in 600 liter oval barriques. Pneumatic pressing for 4 hours, 3 months of fermentation then maturation on the fine lees for nine months. Incredible nose, ripe white fruit, slightly citrus notes, white and yellow flowers then vanilla, white and pink pepper, herbaceous contours and great minerality. Saumur L’Insolite 2020, Chenin Blanc

From a selection of 3 vineyards, one of which is very rich in limestone, one further south towards Anjou with a clayey composition and one over a hundred years old in Saumur. Manual collection in boxes. Alcoholic fermentation in 12 hl oval barrels to preserve all the minerality. Pneumatic pressing for 4 hours then fermentation for 4 months. On the nose it combines concentration, freshness, generosity and power and reveals subtle fruity, floral and vegetal scents. Then the white pulp fruit, citrus fruits, verbena and lime on the finish. In the mouth it is clean and velvety, the freshness is present and draws the contours of the material guaranteeing the aromatic identity of the flavours. Rich, long and energetic finish

Domaine Des Roches Neuves was born in 1993 thanks to the incredible tenacity and will of Thierry German who, originally from Bordeaux, moved to Saumur in the early 1990s where he met his mentor and spiritual father Charly Foucault of Clos Rougeard.

Thierry Germain was one of the 2.0 pioneers of the biodynamic movement in the entire area, and is now rightfully among the best biodynamic companies in all of France, with very low yields between 30 and 15 hectoliters per hectare.

The Domaine offers many variations of the Saumur Champigny denomination, and the main grape variety is Cabernet Franc, but be careful, you could easily fall in love with an unusual wine, produced with Chenin Blanc, called the Insolite, the house white.
