The base wine ages in used wood in which the Insolite previously passes. After blending, it is bottled and refermented in the bottle according to the traditional method. It remains on the yeasts for 18 months.

Domaine Des Roches Neuves was born in 1993 thanks to the incredible tenacity and will of Thierry German who, originally from Bordeaux, moved to Saumur in the early 1990s where he met his mentor and spiritual father Charly Foucault of Clos Rougeard.
Thierry Germain was one of the 2.0 pioneers of the biodynamic movement in the entire area, and is now rightfully among the best biodynamic companies in all of France, with very low yields between 30 and 15 hectoliters per hectare.
The Domaine offers many variations of the Saumur Champigny denomination, and the main grape variety is Cabernet Franc, but be careful, you could easily fall in love with an unusual wine, produced with Chenin Blanc, called the Insolite, the house white.
