Saumur Clos du Moulin 2018 is a white wine produced by Thierry Germain of Domaine des Roches Neuves in Saumur in the Loire Valley. The Clos du Moulin borders the Clos Romans and both produce grapes which, if expertly treated, produce wines with great aging potential. It is obtained with pure Chenin Blanc grapes which ferment spontaneously with indigenous yeasts and which macerate for a couple of days. The aging takes place in large wood for approximately 9 months. Exotic fruit and sweet spices on the nose, freshness and verticality on the palate. Top with the buttered pork tenderloin in a bread crust

The Clos du Moulin borders the Clos Romans and the vines have an average age of 80 years. After a long and progressive pressing, the vinification with indigenous yeasts and without temperature control continues in wood for 9 months, without malolactic fermentation or batonnage.

Ripe exotic fruit and yellow flowers on the nose, then herbaceous and sweet spice notes, incredible minerality

Upon tasting you immediately realize that you are faced with a great wine, still very fresh, vertical and with an uncommon elegance. Superb.

Domaine Des Roches Neuves was born thanks to the incredible tenacity and will of Thierry German who, originally from Bordeaux, moved to Saumur in the early 1990s where he met his mentor and spiritual father Charly Foucault of Clos Rougeard.

Thierry Germain was one of the 2.0 pioneers of the biodynamic movement in the entire area, and is now rightfully among the best biodynamic companies in all of France.

The Domaine offers many variations of the Saumur Champigny denomination, and the main grape variety is Cabernet Franc, but be careful, you could easily fall in love with an unusual wine, produced with Chenin Blanc, called the Insolite, the house white.
