The wine is bottled when fermentation has not yet concluded and therefore with residual sugars. The yeasts still present carry it to completion in the bottle, producing the carbonation that makes the wine sparkling. No degorgement is performed.

Before embarking on his winemaking career in 2001, Frantz worked as a forest ranger in Canada and France.
Then, as mentioned, in 2001, he was struck on the road to MontLouis and decided to buy a small plot of 3 hectares of vineyard.
Since then Frantz has established himself as one of the best producers in the entire Loire, doubling the hectares of his property, now 6 and significantly refining the production technique, now truly enviable but still with a natural and scarcely interventionist approach.
