Champagne Frison Chut Libre for Derain N.M., Pinot Noir 70%, Chardonnay 30%

What to expect from a collaborative Champagne between Dominique Derain and Valerie Frison? Nothing but the exploration of original and authentic flavor profiles. The alcoholic fermentation of the grapes is spontaneous, with indigenous yeasts in used 228 and 500 liter barrels. Foaming in the bottle lasts at least 18 months before disgorging. Produced from 2012 onwards, its name expresses its destiny: "free fall" because it goes down the throat with wonder.

Saint-Aubin Blanc En Vesvau 2015Chardonnay

From a vineyard planted in 1987 on clay-limestone soil. Fermented in wood for one to eight months. The wine remains in wood on the lees until the following harvest. On the nose white flowers and citrus fruits, accompanied by notes of hazelnut. Fruity and mineral taste.

Bourgogne Blanc La Combe 2019Chardonnay

Mercurey Rouge La Plante Chassey 2013, Pinot Noir 90%, Pinot Beurrot (Pinot Gris) 10%

From vines over 100 years old. The 10% of the grapes are not destemmed. Fermentation in wooden vats and aging in wood between 12 and 18 months. Pomegranate, raspberry, lavender and spices. Elegant, fresh, silky.

Las Nubes 2018Pinot Noir

From biodynamically managed vineyards in Chile's Casablanca Valley by Bodega Montsecano, this wine is the fruit of the encounter between Dominique Derain and Julio Donoso, a world-renowned photographer converted to viticulture, "raised" with André Ostertag in Alsace and now in its tenth vintage. Keywords: minimalism, respect for the environment, no temperature control, no additives, no added sulfites. Las Nubes is a cuvée made from grapes harvested in March and 2/3 vinified whole cluster in cement eggs. The final blend was made before the end of alcoholic fermentation to obtain a wine with a very delicate and transparent colour, fresh, fruity and lively.

Saint Aubin (France)

Dominique Derain he's a bigwig at Hautes Cotes de Beaune.

He arrived in 1988 as a cooper, and then decided to start producing wine, with a biodynamic approach, on his estate near Saint-Aubin.

Today he passed his property to Julien Altaber and Carole Schwabwhile still participating in operations in the vineyard and in the cellar.

It is considered one of the Burgundy guru and his consultations are in high demand.

Dominique produces wines that, oxymoron in the bottle, manage to be of boundless elegance but at the same time rustic.

Subtle, slender, ethereal and delicate, wines that are often not fully appreciated by those who are 'taking their first steps' with Pinot Noir. Great wines, however, can be recognized by one thing: the bottle that has just been uncorked is already magically finished and you immediately begin to feel nostalgic for it...

He also started winemaking in Chile, but this is another story
