The grapes come from a micro plot with vines with optimal southeastern exposure, ferment spontaneously thanks to indigenous yeasts, and after two or three weeks of maceration they are placed to age in wooden barrels of various sizes. Las Nubes is a cuvée from grapes harvested in March and 2/3 vinified whole cluster in cement eggs. Dominique Derain he's a bigwig at Hautes Cotes de Beaune.
He arrived in 1988 as a cooper, and then decided to start producing wine, with a biodynamic approach, on his estate near Saint-Aubin.
Today he passed his property to Julien Altaber and Carole Schwabwhile still participating in operations in the vineyard and in the cellar.
