Le uve provengono da una micro-parcella con viti in esposizione ottimale a Sud Est, fermentano spontaneamente grazie ai lieviti autoctoni, dopo un due o tre settimane di macerazione vengono poste ad affinare in botti di legno di varie dimensioni. Pot Pourri di fiori rossi, tanti frutti di bosco maturi, marmellata di Visciole poi Spezie dolci, ritorni minerali e note di sottobosco. Sorso maturo e delicato, il tannino è nobile ed il corpo snello, finale lungo

Le uve provengono da viti del 1920 su terreno ghiaioso, il 10% della massa non viene diraspato, fermentano in tini di legno, ed affinano sempre in legno fino ad un anno e mezzo. Watchwords: minimalism, respect for the environment, no temperature control, no additives, no added sulphites. Las Nubes is a cuvée from grapes harvested in March and 2/3 vinified whole cluster in cement eggs. The final blend was made before the end of alcoholic fermentation to obtain a wine that is delicately coloured and transparent, fresh, fruity and lively. Dominique Derain he's a bigwig at Hautes Cotes de Beaune.
He arrived in 1988 as a cooper, and then decided to start producing wine, with a biodynamic approach, on his estate near Saint-Aubin.
Today he passed his property to Julien Altaber and Carole Schwabwhile still participating in operations in the vineyard and in the cellar.
It is considered one of the Burgundy guru and his consultations are in high demand.
Dominique produces wines that, oxymoron in the bottle, manage to be of boundless elegance but at the same time rustic.
Subtle, slender, ethereal and delicate, wines that are often not fully appreciated by those who are 'taking their first steps' with Pinot Noir.
