From sorb varieties different in shape and size, it is a true "fruit wine" re-fermented in the bottle.
Cormé was born from Eric Bordelet's desire to revive a drink that was popular from the 15th century until the 1950s, produced from the small yellow and red fruits of the Cormier tree (Sorbus Domestica, a tree of the Rosaceae family like the pear and apple trees). What was a popular family beverage, mainly in the French region of Maine, was consumed pure or diluted with water, especially among the poorer populations. Eric Bordelet's Cormé is an exceptional drink, with intense fruit aromas and above all with a taste that is surprisingly creamy and persistent. 30 g/l of unrefined sugar contain the alcoholic potential making this "fruit wine" simply irresistible. The name derives from the Gallic "Curmi", which denoted a fermented beverage like beer.
Poire Authentic 2016
Dry and traditional, a bottle of Normandy pear cider full of flavour and in which the taste of the different pear varieties is combined with a subtle sweetness finely balanced by a crisp acidity. Produced from orchards that have never been treated, it is a great match with scallops, savoury crepes, all kinds of salads and fresh cheeses. Versatile, refreshing and delicious.
Poire Granit 2019
Cider re-fermented in the bottle from pears coming from centuries-old trees. Ferments in steel. Ages first in steel on the lees and then in the bottle for 6 months. Incredible expression of liquid pear in the glass. Very few degrees for a "liquid" that will amaze you. Fantastic on its own, enrapturing with goat cheeses.
Sydre Argelette 2019
Bottle-refermented cider from 20 different apple varieties (40% bitter, 40% sweet, 20% sour). First fermentation in cement and wood. Naturally re-fermented in bottle. Almost vinous impact. Very interesting on spicy and creamy dishes or on medium mature cheeses.
Sydre Brut 2017
Bottle-refermented cider using different varieties of apples from two hundred year old trees. First fermentation in cement and wood. Naturally re-fermented in the bottle. Classic dry cider. Soft attack but in a moment the freshness takes over.

Eric Bordelet, after working as a sommelier at Arpege, decided to work on his family's farm in Charchigne, in the south of Normandy, where apples and pears are produced from trees that are over a hundred years old.
Bordelet produces ciders from biodynamically grown apples and pears that are extraordinary and celebrated around the world.
His is a true referenced fruit wine.
