Ette is a white wine produced by Summer Wolff in Montaldo di Cellina, Piedmont. The Baratuciat grapes come from clay-limestone soils at 250 meters above sea level, ferment spontaneously in concrete with indigenous yeasts and macerate for 9 days on the skins. The refinement always takes place in concrete for a few months. The wine is bottled without filtration or clarification and rests for a year in glass. It is an expressive and harmonious, aromatic and super drinkable wine, the nose is dominated by citrus and floral scents. Ette is the diminutive of Ettore, the second son of Fabrizio and Summer. Try it with fish and shellfish

The vinification and refinement of this wine take place in concrete. Maceration on the skins for 9 days with spontaneous fermentation by indigenous yeasts and refinement for a few months. No fining or filtration, the wine rests in glass for about a year

Summer Wolff is the wife of the famous Fabrizio Iuli, one of the pioneers of natural wine in Italy.
It all started 20 years ago when Summer worked in reception at a small restaurant in Charleston, and it was there that she realized that her life would be inextricably linked to wine.
As a sommelier first in NYC and then Head Sommelier, Export Manager and Wine Broker, in Tuscany.
An incredible journey that took her around Europe to meet small and very small natural wine companies, which left a profound mark on her. And who, together with her husband, an incredibly helpful person, led her to embark on this new adventure.
So, after dreaming of it so much, and also pushed by Fabrizio, Summer decided to make her dream come true, that of becoming a full-fledged vigneron.
Its wines already have a well-defined identity, great to drink, super fun and obviously delicious and natural.
For now, Summer owns two hectares in the same valley where Cascina Iuli is located, has rented a Freisa Piccola vineyard and the goal is to expand, but without rushing!
