“Franc[o] is a shop wine, and it’s completely different. Letizia and I chose to purchase and vinify a grape that we love and with which we had not yet had experience, Cabernet Franc. To this we have added some territorial information: a balance of Cesanese from a splendid vineyard in Olevano Romano and we sincerely thank the gentleman for having given us the grapes from his latest harvest. We hope to have honored them fully. Franc[o] is – therefore – a sincere wine: it tells a true story and the unpredictability of the agricultural world. Franc[o] is a tribute to a person, to a variety, to our way of being frank. And if I can be Franc[o], there is nothing wrong with doing things well.” Cit. Damiano Ciolli. It is the result of 4 days of maceration in cement and spontaneous, alcoholic and malolactic fermentations. The refinement it lasts 8 months – always in concrete – and finally in the bottle for a few months.

Vinification entirely in cement, maceration in cement for 4 days, with spontaneous fermentation and subsequent refinement for 8 months; it is bottled after resting for a few months in the bottle
Floral scents and lots of crunchy berries – blueberry, currant and raspberry – herbaceous notes, especially bay leaves and mint, chocolatey and balsamic notes
Straight, taut and tasty, fresh and with an interesting tannic texture

Olevano Romano, Lazio
The Ciolli family has been producing wine for 5 generations, they do it in Olevano Romano, a few km east of Rome, in a hilly area with volcanic soil.
Ciolli has the merit of having brought a talented but sometimes unexpressed grape variety, the Cesanese, to truly high quality levels, through a natural and minimally interventionist approach in the vineyard and in the cellar.
The focus is entirely on safeguarding the aromatic characteristics of Cesanese and enhancing them!
