Grapevines in Germany were introduced by the Romans around the first century B.C. along the valley of the Moselle and on the left bank of the Rhine, where most of the vineyards had been concentrated since the time of Charlemagne; as was often the case in those days, grapevines were the prerogative of monastic organisations.

From the 15th century, and from the renowned Rheingau area, come the first records of the cultivation of Riesling, the country's flagship variety, but it was not until the 19th century, when the concept of the degree of ripeness of the grape was reinforced, that the level of wine produced also increased, reaching very high peaks in the second half of the last century.

The classification system for German wines is quite cerebral, certainly unique.

Leaving aside the categories of lower quality wines, these distinctions are made within the QmP, the highest quality level conceived in Germany, for which dosage is not permitted:

  • Kabinettlight, low alcohol and dry wines;
  • Spätlese(late harvest) more intense and structured wines than Kabinett, which can be either dry or sweet.
  • Auslese( Selected Harvest) wines made from very ripe grapes, the bunches of which are selected manually in the vineyard before being harvested.
  • Beerenauslese(selected berries) wines produced from grapes whose bunches have been attacked by noble rot (Botrytis Cinerea), a characteristic that gives them aromatic richness and structure;
  • Eiswein(ice wine) the temperature at the time of harvest must not exceed -7° C. The grapes are pressed immediately with the water separated out in the form of ice, resulting in a very concentrated must, rich in acids and sugars, which is transformed into a sweet wine of great acidity.
  • Trockenbeerenauslese(selected dried grapes). Practically immortal, they are only produced in the best years, with dried grapes attacked by noble rot (Botrytis Cinerea). The must produced from these grapes is extremely rich in sugars, making fermentation difficult, and the alcohol content of these wines rarely exceeds 6%.
  • SektQuality sparkling wines that can be produced anywhere and by any method.
