Bianco Macerato 2018 LE3, Garganega
Comes from 60-year-old vines, harvested: by hand in 15 kg boxes. At the end of September the vinification: destemming of the bunches and spontaneous fermentation for 11 days in maceration with the skins at room temperature in concrete tanks, racking and resting on the fine lees until the end span>March, aging in oak barrels before bottling in December. Total sulfur 1 mg/litre
Metodo Classico Copperato 2018 GE2, Durella, Pinot Grigio
It comes from 50-year-old vines, hand-harvested in 15 kg boxes in mid-September. Vinification: destemming of the bunches and soft pressing with a pneumatic press at 0.8 bar, static decantation before spontaneous fermentation for 10 days at room temperature in concrete tanks. Racking off and resting on the fine lees until February, decanting with the addition of fermenting Recioto must for secondary fermentation and bottling.

Comes from 45 year old vines, hand harvested in 15kg boxes. At the beginning of September vinification: pressing-destemming of the bunches and spontaneous fermentation for 12 days at temperaenvironmental fermentation in cement tanks, racking and resting on the fine lees until bottling span>February. It’s a family project that comes from afar. The company philosophy is linked to the passion for life, community, nature and territory. The resulting wine is just a natural effect.
Each Insolente wine comes from a single vineyard whose grapes are vinified with spontaneous fermentation of the entire mass without imposing the temperature. It does not require additions or filtrations. Total sulfur content among the lowest ever, practically absent.
The vineyard of origin is identified on the label by an acronym which corresponds to the initials of the name and surname of a member of the family who has symbolic custody of it. These initials are followed by a sequential number that indicates how many wines have been made from that vineyard up to that point, the vintage and the type
